Pizza...Resurrected



How many leftover slices of pizza have you thrown away in your lifetime?
Heck, how many slices have you thrown away this month alone?

If you're like me and my family, pizza is always an option for dinner. I even eat a slice for breakfast in the morning if I'm desperate enough. It makes me feel like a college student again. Ahhh...what a life?!

As I type this post, I'm belching a bit of pizza goodness from my brunch. I missed the time frame for breakfast, it wasn't quite lunch time, so I took the liberty to combine the two today.

I opened the refrigerator and my options were– pizza and...pizza.

I chose pizza. Yay!!!

Instead of plopping the two slices in the microwave and running the risk of having hard, unevenly heated pizza, I decided to warm them in the oven.

I know.
Two freakin' pieces for all that energy.
Who do I think I am with my bad self?

Still, I chose the oven. Yay!!

I am happy to say that I can now add 'Pizza Reviver' to my resume. If you don't believe me, here's the proof:

Take two, frail-looking pieces of leftover pizza and tell them everything is going to be okay.


Tell the tomatoes how lovely they are and proceed to cut one of them into thin slices.


Place the tomatoes on the leftover pizza slices. Use as little or as many as you'd like.
Sprinkle them with salt, pepper and Parmesan cheese (or whatever toppings you desire).



This part varies. I placed my slices directly on the oven rack for a more crispy crust. You can put them on a baking sheet as well. You'll want to pre-heat the oven to the temperature suggested on the pizza box. Different pizza companies vary. Check on the pizza occasionally to monitor the crust. If you want it really crispy, leave it in longer. I left the pizza in the oven for a little under 10 minutes.

When the pizza is all done, place it on a plate, let it cool and enjoy.

I added a spinach salad to complete my meal.

Needless to say, I'm a happy camper right now. Mmmm, mmmm.
No more trashed pizza slices for me!
